Gimlet Jello Shots

makes 40 shots (.5mg/shot)

Ingredients

  • 9 oz filtered water
  • 9 oz Field Trip Botanical
  • 3 packets unflavored gelatin, should yield about 6 Tbsp total
  • 4 tablespoons fresh lime juice
  • 3 tablespoons simple syrup or agave syrup, plus more to taste
  • Lime zest for garnish
  1. Step 1

    Pour 4.5 oz cold water into a large bowl, then sprinkle the gelatin over top. Mix gently with a rubber spatula.

  2. Step 2

    Warm the remaining 4.5 oz water until hot: lower heat to keep from boiling. Pour the hot water into the bowl with the gelatin and gently stir until completely dissolved.

  3. Step 3

    Allow to cool for 5 minutes or so before stirring in 9 oz of Field Trip Botanical, followed by 4 Tbsp lime juice and 3 Tbsp simple syrup. Taste and adjust if you’d like them a little sweeter.

  4. Step 4

    Pour the entire mixture into a flat glass baking dish. Refrigerate 3-4 hours until firm, then use a 1” cookie cutter to make 40 total shots. Serve on a small platter and top with lime zest if you’d like. Alternatively, pour into 1” silicon candy molds if you’ve got them.
